Exploring the precise craft and complex chemistry of our barrel-aged coffee.
1. The Sponge Effect
The journey begins before the roast. Green (unroasted) coffee beans are incredibly porous. When we place our high-quality, dense green beans into freshly emptied spirits casks—such as bourbon, rum, or wine barrels—they act like a sponge. Over the course of 2 to 4 weeks, the beans absorb the volatile compounds and "spirit memory" trapped deep within the oak.
2. The Chemical Transformation
Barrel aging is a genuine physical and chemical change, not an artificial flavoring. As the beans rest in the wood, slow oxidation softens the natural acidity of the coffee. Simultaneously, the beans pull natural lignins and tannins from the oak, completely transforming the molecular structure of the final brew without retaining any liquid alcohol.

The Roaster's Challenge
Barrel-aged beans require a masterful touch. Because they absorb additional sugars and compounds from the barrel, they brown much faster during the roasting process. We utilize a highly specialized, gentle heat profile with precise development times to ensure the delicate barrel notes harmonize perfectly with the coffee's natural origin flavors. The result is a bold, refined cup unlike any other.

This signature spirit-cask variety highlights the structural precision of our roasting process. We’ve conditioned Brazil Jacuí (Natural) and Sumatra Kerinci (Wet-Hulled) beans in charred oak barrels, soaked in Blue Note Whiskey to extract deep, viscous notes of vanilla, toasted oak, and caramelized chocolate. A refined, spirit-forward profile engineered for French Press, Espresso, and Espresso martini's.
