The Craft Behind The Roast
Originating from smallholder farms surrounding the Haro washing station in the high-altitude Uraga district of Guji, this washed lot exemplifies the pinnacle of Ethiopian coffee elegance. Grown well above 2,000 meters in fertile, semi-forest environments, these dense regional landraces yield an extraordinarily clean and complex cup profile.
We roast this selection to a nimble City/City+ (light-medium) level, ensuring rapid heat application through first crack to preserve its volatile aromatics. By carefully managing the end-of-roast development, we highlight its vibrant citrus acidity and delicate tea-like mouthfeel without introducing roasty undertones.
Roaster's Note: An exceptionally refined cup. The aromatics erupt with intoxicating jasmine floral notes and fresh honey. On the palate, expect layers of ripe peach and nectarine, vibrant black tea, and a crystalline cane sugar finish that lingers long after the sip.
