The Craft Behind The Roast
Situated in the coveted Gedeb district of Yirgacheffe, the Halo Beriti washing station processes cherries from surrounding smallholder farms nestled above 2,100 meters. Designated as Grade 1 Special Prep, this lot undergoes extra hand-sorting and intensive screen selection before and after drying, yielding immaculate bean density and absolute clarity in the cup.
We roast this selection to a precise light-medium profile (City/City+). By controlling the thermal momentum through first crack and dropping the roast early, we lock in its delicate, volatile floral oils and crystalline citric acidity without introducing any roasted grain character.
Roaster's Note: Halo Beriti represents quintessentially floral Yirgacheffe. The aroma is loaded with honeysuckle and lemon blossom. In the cup, expect vibrant, bergamot-like Earl Grey notes paired with sweet honeydew melon, crisp white peach, and a lingering, tea-like finish.
