The Craft Behind The Roast
This certified organic lot hails from smallholder coffee families in the renowned Huila department of southwest Colombia. Grown in mineral-rich volcanic soil along the Andean ranges, these organically cultivated Castillo and Caturra trees produce dense cherries brimming with natural sugars.
We roast this organic selection to a solid Medium profile (City+ to Full City). This development caramelizes the bean’s heavy sucrose foundation into deep cocoa tones while keeping the gentle, crisp fruit acidity crisp and clean.
Roaster's Note: A quintessential Colombian daily drinker with an exceptionally clean finish. The cup opens with rich dark chocolate and raw cane sugar sweetness, accented by a bright pop of red apple acidity and a warm, lingering hazelnut finish.
