The Craft Behind The Roast
Pirates Cask begins with a foundation of 100% washed Colombia Supremo beans, sourced from the high-altitude Andean slopes of Huila. Known for their large 17/18 screen size and dense physical structure, these beans offer a pristine, classic canvas of milk chocolate and toasted walnut. To build the signature profile, we condition the green coffee in authentic Caribbean dark rum casks, allowing the beans to absorb the rich, spiced spirit before roasting.
We push the roast to a deliberate medium-dark level. This deeper development caramelizes the bean's inherent natural sugars while seamlessly integrating the rum-soaked oak characteristics. The result is a heavy, syrupy body that tames any sharp acidity, perfectly balancing the clean Colombian terroir with a decadent, spiced complexity.
Roaster's Note: The large, dense structure of the Supremo beans takes the heat of a medium-dark roast beautifully. The cup opens with a warm, aromatic spice, transitions heavily into dark chocolate and toasted walnut over the palate, and finishes with a lingering, sweet boozy warmth that lives up to its name.
